Cooking with cast iron

Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing.

Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stove-top and oven cooking. On the table, a hot covered dish will keep food hot for second servings.

Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation.

Heat recommendations

Le Creuset cast iron cookware can be used on all heat sources including gas, electric solid plate or radiant ring, vitro-ceramic glass, induction, and ovens fired by gas, oil, coal or wood. When using any glass-topped stove, always lift the pan when moving it; never slide it, as this may damage the stove-top or the base of the pan.

Always match the pan’s base size to the stove-top heat zone to maximize efficiency, and to prevent overheating of the pan sides or damage to the handles.

Gas flames must always be confined to the base area, and must never extend around the sidewalls of the pan. Long handles should be positioned safely where they do not hang over the front of the stove or other heat zones.

Cleaning and Care

Always cool a hot pan for a few minutes before washing.

Do not plunge a hot pan into cold water. While Le Creuset’s enamel is designed to be the most durable on the market, thermal shock may still occur, resulting in cracking or loss of enamel.

If there are food residues, fill the pan with warm water and let soak for 15 to 20 minutes before washing. A brush can be useful for removing small food deposits, or for cleaning between the ribs on grills. Do not use scourers or abrasive cleaners on the cooking surface. Nylon or soft abrasive pads or brushes can be used to remove stubborn residues.

To avoid damaging the enamel, do not use metallic pads or harsh abrasive cleaning agents.

Light stains or metal marks caused by metal tools can be removed with Le Creuset cookware cleaner. An occasional cleaning with this product will also retain the new appearance of your pans.

Never store pans while they are still damp. Store pans in a dry cupboard or airy space away from steam.

High heat temperatures should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks or sauces. High heats should never be used to preheat a pan before lowering the heat for cooking. Cast iron retains heat so efficiently that overheating will cause food to burn or stick.

The vitreous enamel surface is impermeable and therefore ideal for raw or cooked food storage, and for marinating with acidic ingredients such as wine.

I have many Le Creuset Dutch ovens in assorted sizes and colors. The 4.5 quart is probably my favorite. Still easy to hand wash yet still large enough for 6-8 servings of meal soup. I see many reviews where folks have chipping and wear. My advice would be to only use silicone or wood utensils. I deglaze with water to clean although this is not generally recommended but I don''t like a patina to form on mine. I have had no issues and no visible wear on a 4.5 quart I''ve been using constantly for six years. These are made to last.

I cook three meals a day seven days a week and this is my go-to pot. I use it all the time because it is so easy to cook on and clean up after. It also goes with my green kitchen and sits on a shelf and just looks great. I did buy a silcone spatula and use that with it so it doesn''t scratch the surface. The spatula goes in the dishwasher but there is no need to put the pot in because nothing sticks to it. I should have bought this years ago. I cook primarily for two and this is the perfect size for me. 16 people found this helpful Helpful Report CIB5.0 out of 5 starsVerified Purchase Good stuff Reviewed in the United States on April 12, 2018Size: 4.5 QuartColor: Cerise This is a great gift for almost anyone. MUCH better. 21 people found this helpful Helpful Report Doris Cauda5.0 out of 5 starsVerified Purchase Easy to clean Reviewed in the United States on June 18, 2020Size: 4.5 QuartColor: Marseille This pot was on my bucket list and I finally bought one. Pot is heavy so be aware. It''s cast iron with an enamel coating. It''s so nice that my daughter wants me to leave it to her in my will. (Family joke) No disappointments here.

As a product, the Le Creuset dutch ovens are amazing. A beautiful coating of enamel that is super-easy to clean. The casting is solid. The heat is evenly distributed throughout. The lid forms a perfect seal to keep steam in. The color is gorgeous, a graduation from dark red to a bright cheerful red at the top.

I don''t know how I went for so long without one of these!

This is heavy enough to be a nice dutch oven, but only about half as heavy as her old one, and she really likes that.
The only problem is that there is a tiny pinhole flaw in the finish inside, in the bottom. We are thinking of returning it and getting another just like it.

I use it almost every day for a variety of things. I love that it is dishwasher safe and the inside doesn''t stain. Only negative is that the handles do get very hot after cooking but Le Creuset does sell silicone sleeves to put on the handles. Recommend for a family size of 2-4. I would recommend a larger quart size for any large batches of soups as this guy is a tad too small. 2 people found this helpful Helpful Report
